Head Chef | Inventory Specialist

Assume full responsibility for managing a $32K budget for renovation

while supervising 17 cooks and 44 contractors in all aspects of food

service serving over 2,800 meals per month.

-    Successfully maintain a sanitation score of 98% and 100%

     accountability on documents by efficiently overseeing daily food

     preparation activities and the operations of kitchen staff.

-    Plan and supervise the complex breakout of food items for five

     different restaurants, as well as coordinate weekly load outs of

     over 5,000 items while enforcing strict controls over a provisions

     storeroom valued at over $1.6M - leading to dramatic improvements in

     storeroom conditions and inventory validity.

-    Remain abreast of all food borne diseases and the relationship of

     safe temperatures, storage, preparation, quality, and serving of



     Achievement Medals.


Culinary Specialist/Mess Management Training - Operates and manages Navy

messes and living quarters established to feed and accommodate Navy

personnel while assisting supply officers in ordering, storing,

accounting for, and preparing food.
